ABC Z Muffins

If you like to bake and want a tasty way to sneak fruit and veggies into a treat this recipe is for you. Why do I call them ABC Z Muffins, because of the primary ingredients. This recipe calls for apples, bananas, carrots & zucchini. There are a few other main ingredients and I've proportioned, tested and perfected this combination. This is my personal recipe and I typically utilize walnuts and non-dairy vanilla yogurt, but feel free to use the yogurt of your choice.

These muffins are moist and they taste great. Enjoy them for breakfast, brunch or anytime.


Prep Time: 30 mins

Cook Time: 20 mins

Difficulty Level: Medium

Yields: 2 dozen

ABC muffins

3 cups flour (wheat optional)

1 ½ cup granulated sugar (optional coconut or brown sugar)

2 tsp cinnamon

1 tsp nutmeg

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup apple sauce or 1 shredded apple

1 large banana or 2 small (ripe), mashed

1 ½ cup grated carrots

1 ½ cup grated zucchini

½ cup vanilla or fruit yogurt (non-dairy yogurt)

1 cup walnuts or raisins if using both 1/2 cup of each

2 tsp vanilla extract

½ cup oil

3 eggs


Preheat oven to 350 Degrees F.


1) Mash ripe banana(s) with fork- 1 large or 2 small, grate 2 medium carrots, and 2-3 small zucchini's.


2)) Mix all dry ingredients in a bowl (flour, sugar, cinnamon, nutmeg, baking powder, baking soda, salt).


3)) Whisk eggs in a separate bowl then combine oil and vanilla.


4) Combine the dry and wet ingredients together


5) Fold in remaining ingredients (yogurt, walnuts or raisins)


6) Spoon mixture into greased muffin pans or muffin paper lined pans, filling cups halfway

.

Bake at 350 for 20 minutes.


Check muffins to ensure they baked completely by inserting a toothpick into center. It should come out clean. Allow muffins to cool at room temperature. Serve warm.
